That wine was the below. An exceptionally complex and yet utterly drinkable Bourgogne Rouge from Laurent Lignier at Domaine Hubert Lignier. This Domaine, by way of an aside, has long been my preferred producer based in Morey-Saint-Denis, above and beyond more famous names ... especially famille Ponsot ... Naturally old fashioned. All Domaine wines are from now Organic certified plots, though such viticulture has long been in place. Approx. 1/3 whole bunches are retained; macerations are long and cold with minimal interference except for 1 pigeage (foot-stomping) and 1 remontage (pumping over) per day. All wines see two winters in the deep, cold cellar. A simply delightful aromatic profile that makes one think of the Bourgognes from yesteryear. Dark cherry and wild strawberry are wrapped in floral notes and trimmed, as per the house norm, in hints of tobacco and smoky minerals. There is great definition to these elements yet ample pleasure to be had here. Now that is balance. The palate is silken on entry, structured as it should be at this level more by phenolics and acidity, though some fine tannin makes its present felt on the conclusion, along with graphite and mineral notes. Dark cherry, orange rind, and fine herbal nuances blend with further tobacco and ore-like minerality. There is just a dash of the ferruginous here to keep things interesting. Most fine. The nose is well-defined with pure dark cherry and strawberry fruit and more cohesion than the Plantes Gilbert. The medium-bodied palate is fresh with pliant tannins, crunchy red fruit and a hint of graphite towards the finish.
