"Garde-Corps, as its cuvée name suggests, is the trousseau which Tony Bornard makes as a “vin de garde”- i.e. for aging. From almost 40 year old vines grown in a lieu-dit in Arbois-Pupillin called ‘La Bidode’. Destemmed grapes are macerated for one month in tank then pressed and chucked in barrel for approximately one year. The wine is then racked and allowed to settle in tank. Also it has spent several resting years in bottle prior to its release this year. Tony reckons it has potential to age for up to 10 years." - Will
