"Aromatically it suggests great density without weight, with an initial faint and intriguing reduction that segues nicely into a nose of smoky minerals: struck rock and broken shell trimmed in touches of cracked pepper and nutmeg. Crushed citrus leaf, lemon pith, firm pear and peach blossom aromatics follow along with hints of thyme and lemon oil; warm stones and plump oyster behind. The palate retains its Chablisien typicity while possessing good weight. Firmly in the 'upper register' of the palate it opens with a sleek profile, silken in caress with a fine central line of acidity. There is good balance between classical austerity and generosity, with a hint of confiture on the conclusion. Sea salt trims lemon zest and lime curd, along with tart peach skins and white pear adding weight. Supporting: broken chalk, toasted bran.
