The Jerome Lassalle Brut Preference stands apart from the clutch of classic, house-made Champagnes in two respects. First, it is always a gorgeous fruit and floral led Champagne that practically dances across the palate providing refreshment with grace, and never tending lean. Secondly, it is the only house champagne house run entirely by women.
Softly alluring (David emphasises a rolled-R pronunciation) in the glass, the J. Lassalle Brut Preference carries an aromatic profile of orchard fruits, dried meadow flowers, patisserie cream, and baking spices. Aeration reveals supporting lees-work notes, with toasted bran and flaked almonds. The plate is bright and fresh, defined more by sweet but never sucrose floral notes. Pear and chamomile, followed by light mineral touches, buttered classic white bread, and faint hints of crushed stones on the close. That sums up the Lassalle Champagnes. There is an inkling of their higher wines here with almond paste and pistachio praline suggestive in the background.”
