"This 100% Chardonnay Cremant, from vines on the fossil-rich soils of Etoile in Jura, bursts from the glass with an exuberant aromatic profile of crushed rock and shells, fleur de sal, citrus leaf, and just-ripe apricots. The palate is fresh with chalky minerality and a finer bead than most of its competitors; there is a surging line of acidity here matched to the riper fruit and lees derived notes. Green apple, apricot, and Meyer lemon flesh mingle with savoury nuances including shaved parmesan and pain grille. Complex and refreshing in the way Recoltant Champagne should be, but often isn't.
