"Savagnin from Arbois-Pupillin which was macerated for several months (until the April of the following year) in an Italian amphora and then was returned to the amphora for its aging. It is noticeably unfiltered and absolutely delicious, especially with any umami-compatible food. When I visited in the summer, this amphora had developed a large crack straight down the middle, which Tony patched up with mallow leaves. No worries." - Will
