"This 2021 Sauvignon Blanc justly lives up to its reputation as the greatest exemplar of the varietal in Australia. On the nose there is a delightful interplay with a firmly closed, stony wine that teases with lush hedonism in the form of ripe orchard fruit, elderflower, and meadow grass aromas; aeration brings whisps of vanilla pod and creme brulee, sea breeze, and crushed stone. The palace is broad and enveloping, satiny in texture, with firm phenolics and oak tannin bringing support before a fanning, richly fruited close. White and yellow peach, apricot skin, quince, vanillin, whitebox honey; baked heritage apple and some exotic, custard apple. The long and fanning finish, inflected with cut herb freshness coupling with honeyed richness, has repeating notes of mineral earth and elderflower. One for fans of Domaine de Chevalier or Smith-Haut-Lafitte. Superb, unique." - David
