They began conversation to organic farming in 1986, becoming certified in 1997. Alice et Olivier De Moor. Their reputation precedes them. These are highly sought after the world over and finding a bottle in the wild is pretty unlikely. As Sue and Roger (de Moor’s Importer) put it: These wines sell out very very quickly. We only get a limited allocation so there is a ‘De Moor season’ where you are able to buy their wines. But the season is short! They have been tending their organic vines near their village of Courgis for over thirty years. Courgis lies north west of Dijon so it is quite a cold area leading to low yields from the vines. Both Alice and Olivier share the winemaking work. their vineyards are very very close the the Chablis commune, and share the same Kimmeridgian and Portlandian soils. All the grapes are picked by hand and only natural yeasts are used to ferment the wines which are matured in foudre and oak barrels that are typically one to four years old to ensure that the wood does not dominate the fruit." Both wines were aged in stainless steel tank (for 2 years in the case of the 2022 component) prior to blending, a process which the de Moors did to create a more balanced wine.” — Importer’s Notes III Alice & Olivier de Moor 2023 Bourgogne-Chitry Offer: $139.00 2 bottles available “The 2023 Bourgogne-Chitry, which matured in a combination of demi-muids and regular barrels, has a backward nose that unfurls with lanolin, grilled hazelnut and just a hint of smoke. Again, this is quite complex. The palate is clean and fresh, with a lovely texture of orange rind mixed with tangerine that dovetails into saline finish. It's not as long as the Plantation 1902, but this deserves a few months once in bottle.” (90-92)pts — Neal Martin, vinous.com IV Alice & Olivier de Moor 2023 Chablis 'l'Humeur du Temps' Offer: $155.00 1 bottle available “The 2023 Chablis L'Humeur du Temps, which comes from four parcels, just missed a little cohesion and vigour on the nose compared to previous vintages. Its bouquet features scents of beeswax, walnut, and very slight oxidative notes. The palate is well balanced and all about texture rather than overt fruit. A killer line of acidity with a slightly resinous finish and great salinity lingers long in the mouth.” 90pts — Neal Martin, vinous.com V Alice & Olivier de Moor 2023 Chablis 'Bel-Air et Clardy’ Offer: $179.00 1 bottle available “The 2023 Chablis Bel-Air et Clardy (two parcels from limestone and marl soils planted in the same year) has an enticing bouquet, with hints of butterscotch, roasted walnuts, a touch of smoke and a strong marine scent. The palate is well balanced with a tang of mandarin and tangerine. This is off-dry and almost Chenin-like towards the texturally satisfying finish.
